The 270 is useful when butchering large bodied fish. Tuna especially. It also is a great meat slicer even though that isn’t what it’s necessarily meant for... 240 at home is plenty as you most likely won’t be breaking down entire bodies of tuna etc.

A question.
If you are a chef - why would you have your knives in storage? I’ve known a few chefs and even if they were living on a friends couch between gigs they always have had their knives. This is like a carpenter having his hammer in a store and lock.

I was thinking the same thing. He probably does work in the food industry but working the grill and the fryer at Applebee’s is all he does.

Y’all are going to think I’m crazy but I absolutely love the White handled food service knives that you buy at the wholesale stores. I last purchased mine at Sam’s in Baton Rouge.
1. They’re super cheap
2. Very durable.
3. Very easy to sharpen and maintain the blade.
4. They feel great in your hand to use.
Obviously they’re not as fancy and may not be precision balanced but I’ll tell you, as someone who loves to cook and cooks often, these are my go to work horses.

That Shun boning knife is the best knife for trimming brisket I have ever used. I ise it and my Shun Chefs knife most of the time.

I haven’t worked in a professional kitchen in nearly two years and don’t plan on going back anytime soon
But I’ve worked with/for beard award winners and nominees, done bocuse d’or dinners, been on food network and travel channel, featured in southern living... all before the age of 25 but I got burnt out on the lifestyle and have no interest in getting back into it..
