Anyone here make zuchinni/vegetable noodles?

I have been seeing lots of recipes using zuchinni noodles online lately. Seems like it would be good if you enjoy lots of vegetables but I wonder about the texture compared to normal pasta. I do not have a spiralizer but apparently you can just use a box grater.

We make them from time to time. No, it's not as good as real pasta, but it's not bad either.

I have seen recipes that call for sauteing, for cooking in your sauce and for just using them raw. How do you like them best?

the zucchini noodles are pretty good. we have some little spiral tool which is I guess what you're referring to. Obviously not as good as pasta noodles, but they're better than I expected. We bake them and the texture actually gets pretty close to pasta noodles.

I julienne them on a mandolin. I use both yellow squash and zucchini. I just saute them in olive oil with a little salt and pepper. When they get soft I put meatballs and gravy over them. It is great, but you're not going to think it's pasta.

I'm no spaghetti squash expert. I've only made it a couple of times. I don't saute the zucchini that long because I enjoy the crunch and it holds up better with the gravy. Give it a shot. It's an excellent way to get some additional vegetables in your diet.

This. I got the Vegetti and I have only used it once for this purpose. It is produces way too mushy of a texture if you're trying to make and cook 'noodles' out of zucchini.

I'd rather roast a mixture of vegetables where they get brown and crispy and pour spaghetti sauce on that.

ETA: I'll have to try cooking it a lot less.

get your skillet good and hot, add some olive oil, add the veggie "noodles" and toss them for just a minute or so, just long enough to get them hot.

I like them, I'll eat them with sauce or just a little butter and pepper

I'll do this in the summer when I have an abundance of zucchini

zucchini is far superior to summer squash for this IMO

its all i do now, havent had real pasta in years

its a difference taste but i like it just as much. just play around and learn how to cook it

You cook spaghetti squash whole first and then drag out the stringy "guts" with a fork. But the taste is similar.

Check out the blog the inspiralizer. She's got some amazing recipes on how to use vegetables as a base for meals. Having a spiralizer helps but is not required.

I don't love zucchini and this does nothing for me at all. I love yellow squash, but not the squash noodles. I think it's a fad thing.

I roast cauliflower and put spaghetti sauce/meatballs or Alfredo sauce/chicken with it and it is delicious!!

After you spiralize the zoodles, you bring some water to a boil, and drop them in water for a minute, maybe two. I think they're close to regular noodles. It's not the same with summer squash- too many seeds.

I didn't like them that way. Just not my thing. If I'm eating a pasta dish, I'm going to have real pasta.

its worth getting a spiralizer if you eat healthy often
