Anyone here do a crawfish boil potato salad? Care to share your recipe?

Yes. Just swap out your regular potatoes with the baby reds from the boil.

When I was a kid, we always put crawfish and a handful of the potatoes from the boil into a leftover potato salad. Also a little bit of olive salad as well.

I always boil my potatoes in seafood boil when making potato salad.
I'll peel the potatoes, cut them up a same size chunks for consistent cooking, season the water and bring it to a boil and then add the potatoes and cook until fork tender. I also add eggs to the water to boil to add to the potato salad at the same time.
While the potatoes are boiling, I dice up onion, celery, some green onion, a bit of parsley, some dill pickle, salad olives with the pimento, add some sweet relish, yellow mustard and lots of mayo. This is mixed real good to get it blended together.
Drain the potatoes and I use a potato masher to break them up a good bit, but leave some small chunks. Add the above mixture and cut up boiled eggs and mix well.
Taste and adjust your seasoning/mayo/mustard ratio if needed to your liking and refrigerate. I like my potato salad cold.

Forgot to mention, you can also dice the potatoes from a boil and use them to make an omelet for breakfast.
I like to take the potatoes, some sausage and mushrooms and cut them up in bite size pieces, heat them up and toss that in my eggs for a tasty omelet, and it's even better if you have some leftover crawfish to toss in there too.
ETA: Look up "Cajun Ninja's After The Boil Soup" on u-tube for a great recipe to use whatever is left over from a crawfish boil. You won't regret making that stuff.

Yes. I mash up garlic from the boil, mix it with mayo and mustard then mix with the chopped up potatoes from the boil along with some chopped pickles and eggs. It's even better with eggs from the boil. I like to drop them in when the crawfish soak.

Once a year we make a pilgrimage down to La. to visit relatives. First stop is always by my Ma'maw's house.
One of the food items she makes sure to have on hand is her crawfish potato salad.
Her recipe is stupid simple and addictively delicious. I don't know the 'recipe' but her ingredients include, potatoes, crawfish, Miracle Whip (sacrilege, I know), yellow mustard, white vinegar, salt, pepper, sugar (but it's not sweet) and liquid crab boil.
I make a boiled shrimp potato salad that has a bit more to it than her crawfish version.

ive had it both ways
using crab boiled potatoes, AND making it regular way and adding dry crab boil seasoning mix to it
both are great and i think it tastes better using the dry mix seasoning added to it because you have more control over the strength of the flavor

Put a whole chicken in a pantyhose and tie it then boil with crawfish. Let it cool and debone and make crawfish boil chicken salad. I’ve done that for years. Good stuff.
