Anyone have a simple dump and leave Tex mex recipe

Just looking if anyone has a enchilada or burrito type casserole Tex Mex for the slow cooker.

I do not want have a lot in cupboard left and don't want to go exotic

Made this burrito bowl a week or so ago and thought it was pretty good. Can probably sub the sweet-potato for something else if you wanted to.

It means they don't really have spices and ingredients on hand, they don't want to go out and buy them and they don't want any spices or ingredients left over.
Not wanting to go "exotic" is a relative term with many implications.. mostly sexual.

Tell us what you have to work with.

rice? Black beans? pinto beans? taco seasoning? chili powder? onion? chilies? Chips? Cheese?

Hard to suggest a dish if you are only going to say, "I don't have any of that."

Rub down a small pork roast with your favorite powdered taco seasoning packet. Put in crock pot with one 12 oz. dark beer (Shiner works well).
Let cook until falling apart.
Serve on tortillas with queso fresco.

1 pound ground beef
1 cup chopped onion
1/2 cup chopped green pepper
1 can (16 ounces) pinto or kidney beans, rinsed and drained
1 can (15 ounces) black beans, rinsed and drained
1 can (10 ounces) diced tomatoes and green chilies, undrained
1/3 cup water
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup shredded sharp cheddar cheese
1 cup shredded Monterey Jack cheese
6 flour tortillas (6 inches)
Directions
In a large skillet, cook the beef, onion and green pepper until meat is no longer pink; drain. Add the next eight ingredients; bring to a boil. Reduce heat; cover and simmer for 10 minutes. Combine cheeses.
In a 5-qt. slow cooker, layer about 3/4 cup beef mixture, one tortilla and about 1/3 cup cheese. Repeat layers. Cover and cook on low for 5-7 hours or until heated through. Yield: 4 servings.

Layered like this
Spinach
Corn (frozen or canned, but drain the canned)
Chicken breasts and /or thighs
Taco seasoning
Enchilada sauce
Green chiles
Cook on low for 6-8 hours
Last 30 minutes, dump a package of Lipton Mexican rice in to absorb the juice. Regular white rice will take about an hour, possibly longer.

Serve with shredded cheese, sour cream and guac.

It's Tex mex. don't overthink it

Pick a meat, any meat. Throw in crock pot, dump rotel and a little liquid on top(beans optional).

Sprinkle liberally with garlic, cumin, and chili powder.

Come back in 6-8 hours, shred said meat.

Drain liquid

Throw on top of chips, on top of rice, or wrap up in a tortilla

I ended up
Browning some meat and adding McCormick Taco Seasoning mix

Added some salsa refried beans brought back to boil


Layered tortillas meat mixture cheeses and enchilada sauce 3 times set for 8 hours on slow cooker

It's an experiment as I wanted to do something different than the queso chip mix and if I failed so be it.

3-4 chicken breasts, 1 can rotel, 1 packet taco seasoning and a little bit of water, maybe half the rotel can if you choose to use a pressure cooker. Let it cook and then shred for super easy chicken tacos. You can't really mess it up. I prefer to use my pressure cooker since it has the saute feature and I can crank it up after I shred the meat to cook off any excess liquid.

If you don't have taco seasoning just use salt, cumin, chili powder and some garlic powder. Add pepper/cayenne if you want.
