Anyone got a good meatloaf recipe?

I can never decide which is better - meat loaf with red gravy or brown gravy. Which is more common? Any opinions?

1 envelope Lipton Onion Soup Mix
2 lbs ground beef
3/4 cup bread crumbs
2 eggs
3/4 cup water
1/3 cup ketchup
Mix all together (I use stand mixer)
Bake at 350 F for 1 hour

I also use this recipe for stuffed bell peppers

I'm in the brown gravy camp. I don't like sweet sauces on my meatloaf. Also, the mashed potatoes demand brown gravy.

I've made the one linked below several times. It's very moist. I add a bit more seasoning to it, but it doesn't need a lot. I don't make the tomato topping. I drained the drippings and made a brown sauce with more onions and garlic and used that when it was done.

I like a classic recipe

INGREDIENTS:
1-1/2 pounds Ground Beef (93% lean or leaner)
3/4 cup Panko bread crumbs
3/4 cup ketchup, divided
1/2 cup minced onion
1 egg
1 tablespoon Worcestershire sauce
2 teaspoons minced garlic
1 teaspoon dried thyme leaves
3/4 teaspoon pepper
1/2 teaspoon salt

Simple, including using ketchup

The Meat Eater Meatloaf

This one is made for deer but you could use lean beef. Absolutely delicious meatloaf

I usually just wing it so I can't give you a recipe, but my one suggestion is to cook your vegetables (onion, celery, BP and garlic), let it cool then add to the mixture. Don't put raw vegetables in the mixture. Taste much better.

ETA: I just looked at Paul P recipe and I pretty much use everything he mentions except bay leaf and nutmeg.

I like to dump a cab of Rotel on top. It mixes just fine with the mashed potatoes.

It really makes a difference and I think the butter crackers do as well. I'm going to incorporate those things into other recipes.

I will get downvoted to oblivion for this likely, but I always feel like my beef meatloafs are too "moist" and don't stay together, while my turkey meatloafs have great taste and structure
