brown chicken thighs and sausage--remove from pan
brown trinity until well wilted, making sure to scrape up the gradu on the bottom of the pot.
Add chicken stock and bring to a simmer-season with your fave creole seasoning
Add rice, turn heat to low, place lid on top for 20 minutes.
