Y’all have inspired me to give it a go.

Peaked at it today and noticed the nutmeg had settled to the bottom of each bottle. Does this seem to be the norm in y’all’s experience?

Yep,
I shake the bottles about once a month just because. I imagine that it settles again in about five minutes

I was wondering the same thing. Made 2 batches last week… one with 4 roses and one with some Buffalo Trace.

Think I may make a couple more to finish off the cognac.

Yeah after I saw this thread I decided to make some. I made a single batch but pretty much have enough to do a 2nd batch. I've already got the jars, alcohol, and most of the dairy needed. Just have to grab some more whole milk. The biggest pain will be finding room in the fridge.

It's not too late. It tastes great after a month.

Will be making mine this week.

I don't find that ageing it over 4 weeks makes any difference.

last year I did 4 months or so. Tasted slightly different, but not worth the extra hassle. It could be debated on whether it tasted better or not than the 4 week age.

Just got done making a batch tonight for the first time. Excited to try it out next month. I want to make some after Christmas for next year so I don't forget

After finding this thread, made a double batch tonight myself. The only cognac the liquor store had was Meukow VS. I know nothing about Cognac, so hope it comes out decent.

It's going to be fine. I use Armagnac because it's cheaper.

If I make a batch this weekend, will it be good to consume mid-December?

Yes.

It'll be good to consume tomorrow but the aging does mellow it out some.

Yeah, there is a big difference between 1 week and 2 weeks. My batch would be perfectly fine to drink now if I wanted. It is very good.

Made my batch. More economical to make more than one batch but I don't have the fridge real estate.

Alright y’all talked me into it. Made a batch this morning and placed in the refrigerator.
