A real conundrum

Fellow FDBErs,

I come to you at the end of this trying year with a conundrum. A real brain teaser and seek your input.

If I make a stock with tomato in it and use that stock to make gumbo, have I made a gumbo with tomatoes? This is troubling me.

Again only the stock had tomatoes which is pretty standard for any stock making technique

Still a gumbo. None other than Randy Cheramie, chef/instructor at the Folse culinary school at Nicholls State in Thibodaux, used to use a little tomato in his gumbo at his family’s late, lamented restaurant Randolph’s, in Golden Meadow. He was second generation proprietor of the place, and thus his bayou Cajun family had a tradition of using some tomato in the pot.

I think gumbo “rules” miss the whole damn point of gumbo. Merry Christmas, BO,

well then, you already have your answer.

Me personally? If I am making a stock for gumbo it does not include tomatoes, period.

And see I don’t think you can make a good stock without tomato and the acid and coloring it brings.

I’ve never used tomato in a stock. I don’t see any need for acidity or color unless I was looking for a reddish color. And in a gumbo, I am not.

But to answer your question, if you consider your stock to be tomato flavored, then yes, you made a gumbo with tomatoes. If you consider a tomato to just be part of the ingredients (not the main flavoring aspect), then no, your gumbo doesn’t have tomatoes. If I put celery in a stock, that’s just part of the mix. I’d say the same can be said for a tomato.

I have never made gumbo with tomatoes but am making chicken stock tonight for Christmas gumbo and as I was adding tomatoes as I often do had this great feeling of “well sheeeeit”

And come on acidity in a stock and color are incredibly important. Wine, browning of the bones/veggies, cooking it down. That’s all building flavor.

I certainly understand the placement of tomatoes in certain stock, especially something like a beef stew but in a gumbo I find it unnecessary. I also don’t understand the need for that acidity.

plz post some pics of the gumbo. I would not even think of using lemon in a gumbo.

Well said!! It's a fricken gumbo, make it the way you like it. Me I like tomatoes....

As I’ve said many times I’ve always put a can or so of diced tomatoes in all of my gumbos as did my mother. I’ve never once served a bowl and had anyone say “tomatoes? I’m not eating this shite.”

I like tomatoes. It’s my gumbo. And today’s chicken and sausage will have them in it. The crab and shrimp I did for Thanksgiving had them in it too.

So if it’s not gumbo what should I call it? Soup?

Tomatoes? What a fig. I can’t believe I have to read this shite the day before Christ’s birthday. If you’re looking for acidity, why not add a little vinegar?

Why on earth would you care about the colour of the stock? The final product is going to be brown anyway once you add the roux.

The answer is yes, but who cares? If you like the finished product, you’ll be happy.

I don’t use tomato in any stocks.

I put tomato in my gumbo stock last year and nothing bad happened this year. Go for it.
