New Orleans has too many apathetic hipster waiters whose ironic handlebar mustaches and contrived aloofness would likely score the restaurant no points with inspectors. It would be a stumbling block for Peche, which, imo, puts out a better culinary product than say Angler (one star) in SF. The service, however, at Angler is on another level than Peche.

There are a bunch of New Orleans restaurants that would get one star, which many excellent restaurants would consider an honor. Some may even get two stars.
I don’t think we have any that would get three stars based upon the same criteria used in Europe or New York. Not even close.
Guy Savoy is Paris just got demoted to a 2 star.

There's no place in NOLA currently that would remotely sniff a 3 star. None. R'evolution MIGHT be the closest currently and it wouldn't even get 2.
I've eaten at places with 3, 2, 1. No where in NOLA comes close to 3.
Saint Germain would get a star, for sure I would think. Places like Peche and Herbsaint could get Big Gourmand. I could see Dakar getting some kind of Star but I'm not sure it would be solely on merit.

One thing Michelin eventually coming to down though would be to bring the competitiveness in the scene to another level, have restaurants spend more time focusing on service, and possibly have people start some higher concept restaurants regularly.

Absolutely correct.
Like you said, lots of 1 star contenders and maybe a couple 2s (maybe), but if you think anyplace in Nola is worthy of 3 Michelin stars you’re out of your mind.

Agree with you. I'm not sure 3-star dining would particularly fly here either though. Figure Michelin would want at least 1 three star on their list if they do expand the guide.

NOLA isn't a big enough or rich enough city to maintain a true 3 Star. I could see in theory if some place opened that was stunning and became a national sensation, like a 3 michelin star version of Turkey and The Wolf or something
But Michelin coming to town WILL change the dining scene here, like it or not. We are a small enough city for that single decision to have huge impact

I can imagine a few with the backing and hunger to go after multiple stars.

Mason Hereford could go for one I bet, and has the celebrity status and political will to get something like that. Not sure he has the actual talent for one, though. (or the desire for that level of service, I seriously doubt it)
I think Alon Shaya could have that kind of pull to attempt to achieve it too

Mason can cook at that level, but nothing he has done on his own would earn a star. He has the hype train though. Neighbor was jacked about going to Hungry Eyes on Saturday. Couldn't even explain what was on the menu.
Devillier, Eric Cook, Stoltzfus may nut up, Nina Compton probably is good on her own, Link probably has a couple of stars that would take a run if he backed them. Burgau?

Hungry Eyes is good but more about vibe. The food was good, I wouldn't say anything was sensational. The sweetbreads were actually pretty darn good, but more so what came with them.

NOLA restaurants mosty cater to tourists and the menu and service matches that. I love NOLA food but it' not Chicago or New York and never will be. The reality of NOLA tourist budgets means it's hard to meet the service and ingredient level required to get even one star.
