10 gallons of pears 5 gallons of muscadine, WWYD

Friend of mine has a pear tree and some muscadine vines and gave me all of this. It's taking up one of my deep freezers and I've got a whole cow at the butcher right now.
I was thinking wine for both but wanted to see if anyone had better ideas? Or recipes for wine.

There are ways to control the sweetness of a wine. It doesn't have to be "too sweet".
