On Alton Brown's "Good Eats" episode Bowl O' Bayou, he offered this expertise:
"Now, no good gumbo is complete without a hearty sausage. Traditionally, of course, a Cajun sausage would be used. Some folks like a boudin, which is a sausage stuffed with seasoned pork and rice. But I'm a purist and that means andouille."
So, if Alton is to be trusted, there are some folks out there who like boudin in gumbo.

I'd give it a shot with subbing rice for boudin (no casing) in a gumbo. I've seen people do it with jambalaya.

Ok. So we just ate the soup.
I gotta say, I was pleasantly surprised at how good it turned out. I was expecting a disaster.
It was definitely more creamy than our typical 15 bean soup, but it wasn't porridge thick.
We used a base of chicken and beef stock, a 15 bean soup pack, one sweet onion, basil and 4 boudin links.
We seasoned it with salt, pepper, a little Tony's for some spice. Simple really.

You could also toss it in at the last 30 minutes or so if you wanted it more of a broth soup.
I stuff it in green bell peppers and bake.

We had the leftovers for supper last night.
I was anticipating the rice to be complete mush, but it actually tasted better this time.

I wouldn't even care if it looked like shite, everything in it sounds good, so it couldn't be THAT bad
