Had to cancel our Jamaican Honeymoon the week before Christmas, Help with Plan B

Long story short, my girlfriend tested positive for COVID. It didn't affect her very bad, Thank you Jesus. However, there's no way she's going to be able to pass the COVID test to be able to leave the country next month. I'm able to get a full refund from the resort, but not the flight. So we're looking at doing something here in the states.
She's never seen snow before, like legit snow, and I've never been skiing either. So we've been looking at maybe Colorado, Lake Tahoe, or SLC/Snowbird area. Thought about maybe Key West for a minute too, but probably rather the snow. What's a good recommendation for something that might still be available to book? Don't have to ski the whole time, but a couple days worth of skiing/sledding etc. is probably good. Would like something romantic since its a honeymoon, so somewhere with good dining and views as well.

How long ago did she have it? Seems like she'd be able to pass the test if it's not for almost another month.
Anyhoo...as for snow...just check on isolation regulations and closures in certain areas before you book.

This week. No guarantee she can pass the test in a little over 2 weeks. Would rather look at plan B now while I can still get a full refund from the resort.

If you can travel while kids are still in school the week before Christmas is a great time to be on the slopes. Great rates usually and often great snow

The ski resorts in CO all just went to "red" on the COVID scale, and indoor dining is not allowed. This may be lifted by the time you travel in a month - but something to consider anywhere you are going.
A cabin on Lake Tahoe sounds lovely - hiking and skiing but I am unsure of what their COVID restrictions are. Likely no restaurants open there if I had to guess.

There’s also some people that can’t pass one a month or 6 weeks later with no symptoms. I haven’t canceled yet, but starting to look for a backup plan.

Well coming from someone that lives in Colorado and is currently escaping to Wyoming, don’t do Colorado.
Utah isn’t much better. Possibly Jackson hole but I know the western side of the state is much more paranoid than the rest of the state.

This isn't what you asked for but you could look at going somewhere in Mexico, like Cabo. Mexico does not require a COVID test nor will she need one to return.

Half of Lake Tahoe is in Nevada so may be OK there.

A suggestion: Cancel the resort. Take your covid tests in two weeks. If she passes, see if you can rebook the resort. You almost certainly will be able to. If you can’t you can still last minute book just about anything this year.
