Not even sure how you'd fly to some of these places given restrictions in other countries/airports. Cool thought though to go to Zambia lol

They show a picture of Iguazu Falls from the Brazilian side and encourage you to go there. If you can't visit the Argentine side of the falls, that would be a mistake. There's much more to see on the Argentine side.

Beggars can't be choosers, but ya, they should probably pick another time.

You can’t fly to any of those places directly though, so how does that work as far as Covid tests if you have to fly through somewhere else?

As of today there were nonstop flights from the US to these countries on the list:

Dominican Republic
Mexico
Brazil
Serbia
Turkey

At a lot of major foreign hubs it is OK to transit, you just can't enter the country. I'll fly through Amsterdam in 12 days - Delta and KLM to Kenya and back from Tanzania. At least I hope I am, Kenya and the Netherlands are both seeing a big spike now.

If things are still like they are currently, next spring, Istanbul and Cappadocia are looking likely

Or Macedonia. I'd love to take some historical tours there.
