The woodie is the best tasting duck, followed by the Green Wing Teal. Pintail can be #2, but Pintail's diet can get weird. My rankings:


Wood Duck
Green Wing Teal
Pintail
Widgeon
Mallard
Blue Wing Teal
Gadwall

We don't kill/eat enough Canvas Back for me to rank them. But I think they are fine eating...

While you can see the difference in the bills(Blue wings are damn near spoonies) I still like them better than Mallards and Gads.

The canvasbacks we kill up here in North LA are all full of rice so they taste good. Not sure about the lake and marsh ones.

I like teal the best.

I like to cut the breast into medallion pieces and grill them to medium rare. They are tender if you do not grill them too long.

Hunted Catahoula my entire life and never heard anyone turn their nose up at canvasbacks

This. We cooked down dosgris early in the season and you couldn’t tell the difference from them and other puddle ducks. I wouldn’t touch dosgris after the first split.

canvasback is a diver. they don't taste well to me. kinda like a do gris.

i pick woodie, gw teal, mallard, pintail, then widgeons. Mexican squealer is a big bird and makes good gumbos.

i heard from an old coonass that the becrosh with white wing tips is the best tasting bird, up there with a young gros beck.
