then but them in a saltwater brine for 1 day.
I use ice water, a bit of vinegar, and salt. Works well for me.

Why everyone knows that Spoonies are the best!

The woodie is the best tasting duck, followed by the Green Wing Teal. Pintail can be #2, but Pintail's diet can get weird. My rankings:
Wood Duck
Green Wing Teal
Pintail
Widgeon
Mallard
Blue Wing Teal
Gadwall
We don't kill/eat enough Canvas Back for me to rank them. But I think they are fine eating...

Woodies and Teal best overall. Mallards for the gumbo.

Gets mentioned a lot but I have never eaten one. Cant be that good because catahoula lake hunters call them trash ducks and you can usually see some thrown on the side of the road during any day of duck season

I feel you cannot lump all teal together as equal. There is not comparison between GW and BW teal. GW teal are the best, BW teal way down on the list.

The canvasbacks we kill up here in North LA are all full of rice so they taste good. Not sure about the lake and marsh ones.

I like teal the best.
I like to cut the breast into medallion pieces and grill them to medium rare. They are tender if you do not grill them too long.

to me they are all good except for divers that eat fish.

Hunted Catahoula my entire life and never heard anyone turn their nose up at canvasbacks

The big white ones out the neighborhood pond are the best to eat imo

This. We cooked down dosgris early in the season and you couldn’t tell the difference from them and other puddle ducks. I wouldn’t touch dosgris after the first split.

For me its a wood duck followed by a mallard/Gadwall.
for me its wood. For grilling though, hard to beat teal breast.

Gadwall should be at the bottom when it comes to best tasting ducks.

canvasback is a diver. they don't taste well to me. kinda like a do gris.
i pick woodie, gw teal, mallard, pintail, then widgeons. Mexican squealer is a big bird and makes good gumbos.
