Salted and peppered steaks hours before cooking

I typically go with salt and pepper just minutes before cooking but I had time today so I seasoned prior. I currently have them sitting in the fridge waiting to cook later tonight. My question is, when it comes time to cook should I sprinkle a little more of each on there? Or just throw them on the grill?

You shouldn't need to unless you feel you need more seasoning. You've effectively dry brined your steak already.

Since I like to seer at a very high temperature, I leave off the pepper until the very end.

I've always heard pepper can burn and produce a bitter taste. I've always used a hybrid approach... just a few grains before putting it on the grill, then a good bit more after it comes off of the grill.

Yeah pepper burns. And there is no scientific value into adding it before like salt

Kosher salt both sides either just before heat (+pepper) or one hour before. Avoid the in-between time.

In Franklins book on steak cooking he has segment on salting before cooking. He said minimum is 4 hours

I remember coming across this article. They say 40+ minutes minimum but 60+ is a safe thing to remember.

Jesus, just season your steaks, cook them and enjoy. If you can’t like a steak because you peppered it, you suck as a person.

What?

Salt and pepper while I’m getting the grill or cast iron hot. If it only takes 5 minutes, that’s how long the S&P is on there. I don’t like to overthink something as simple as a piece of beef.

salting/brining meat really helps out with shittier cuts. it's somewhat wasted on say, a ribeye, but it can comlpetely change chuck

Idk what steaks you have but it's not really necessary unless you're going for a dry brine. You risk pulling out the moisture in the meat with the salt but a dry brine is really good depending on the meat.

I don't have time for it because I'm too impulsive with steak. It's usually a grab it on the way home deal for me, so I don't have time to dry brine.
