Vietnamese Cookbook ...

Do any of you know of a solid, legitimate, Vietnamese cookbook?

Want to get one, but I'm not interested in having a book on my shelf that's the equivalent of having a "Better Homes and Gardens New Orleans Cajun" cookbook written by Martha in Vermont with a bunch of recipes for "Disney Gumbo."

I want the "Picayune," "River Road," or "Talk About Good" of Vietnamese cuisine.

Does such a cookbook exist?

Lemongrass, I think, is the name of an awesome book I have. I'll check later when I'm home tonight.

Is that one more soupy or the thicker one? I haven't revisited that thread in a couple years.

I don't know if this meets your definition. The chef's restaurant is James Beard award winning, so it might be too modern for what you're looking for. But he is from Vietnam.

I think the recipes are fantastic and actually fairly true to Vietnamese cuisine. Also the book is gorgeous.

Vietnamese Food Any Day, by Andrea Nguyen.

I don’t have it, but people on another food board really enjoy it. And now I’m going to buy it.

Truth be told it’s hard to find good cookbooks for any Asian cuisine. I know there are some out there but they don’t seem plentiful.

Anything I’ve wanted to learn cooking Vietnamese or any other asian dish I’ve been watching on YouTube.

This is going to sound like a cocky answer, but it isn't: Get to know your local library. Over the course of time I've checked out a dozen or so Vietnamese cookbooks.

A good book with a modern spin on Viet cuisine is the Slanted Door.

I would just watch youtube videos and use them as guidelines. You can adjust recipes according to your taste. And if you do it again and again, you will find what works for you.

I know when I cook, I may have 3-4 versions of a recipe (like curry). Some ingredients are mandatory(coconut milk) for the recipes, some are options(potatoes, peppers), some can be substituted(rock sugar vs reg sugar).

In cooking, I'd say the journey is just as important and fun as the destination.

One more thing I would like to add...don't use Read Boat fish sauce in your cooking. It's too overpowering(costly too) and will ruin your dish if you are not careful. Fish sauce in integral in Viet cuisine and the only two I recommend is Phan Thiet and Golden Shell(hard to find).
