Matt Courville's place on 49 north of Laffy is who I used before I started doing my own. When you walk in its impressive how clean everything is. Exit 4 I believe.

I also used Chadleys off of Pinhook. He made me some burritos and pot pies with my deer meat and was fabulous.

Learn to do it yourself.

What are you looking to get done?
For hamburger or fresh sausage, nobody beats Adrienne’s Grocery. They don’t do smoked sausage or jerky or anything like that. For the burger I get 10% ribeye fat mixed with mine and it’s excellent.

Wtf is wrong with processing your own deer... must be some female downvotes....

What do you want done to it?
If you want smoked sausage, there is a guy in Port Barre that was the butcher for Champagnes in Leonville for years, Bourques in Port Barre for years, and now the butcher for Kirk Martin. You won't get better smoked sausage.

M&S grocery will process it for you too.

Not exactly in Lafayette, but Leger's in Port Barre has the best sausage, both smoked and fresh, that you're going to find.

I’ve used a bunch all around. Now I stick with Adrians for my ground meat and Best Stop for my smoked sausage.

Legers in Port Barre is good, but my buddy Scott Courville is as good and much cheaper.
Anyone that's smoked sausage for years is going to be great at it. Scott has been doing it for decades for 3 different places.

Courville is expensive. He is an extremely talented taxidermist and a really nice guy, but he charges too much for a deer to get processed.
I’d go with Chadley’s or Adrian’s grocery for good meat and a very fair price.

Processing is my favorite part of hunting.

Processing deer is my least favorite part of hunting. But I do it because no one will do it to my standards.Besides ,if they did it would cost a fortune. It takes me about 20 hours,I get every speck of fat and “silver skin” off.I don’t make sausage, make jerky some years.
Deer sausage doesn’t do it for me,if I kill a wild pig I’ll make sausage with that.

You pay another man to grind up your meat for you? You know you can get a grinder and do it yourself for the price of having 2 deer ground.

Afraid to get meat under his fingernails...

I think we have some queer animal “rights” posters trolling.

No. No one asked for commentary. I processed deer my whole life. Now I use a processor. I am not less many, or knowledgeable. I am just busy as all hell.
All the process your own came off a little assholish
