My BIL is wanting to do several fried turkeys for families without one this year.

How many times can you use the same pot of oil if the turkeys are injected the night before?

I have done 3 back to back to back and my oil was fine.

ETA: My BIL brought one over a few years back that had a lot of sugar in his injection(I didn't know this at the time) and it burned in the oil and really dirtied my oil.
So keep that in mind.

watch your temps and don't burn it and you do a lot.

Watch all those injection concoctions too---they burn easily. Butter, for example, burns at much lower temperatures than does peanut oil.

I've done 5 in the same oil. Three for me and 2 for neighbors and it was all good.

Doing several would be easier with 2 pots though and that is what I did last year. Cuts the overall cook time standing around watching the pot in half. I did 6 last year between 2 pots.

ETA: I make my own injection liquid and use butter as one of the ingredients but it's never had any effect on the oil since it is inside the meat. I inject the night before and put the turkeys back in the fridge uncovered to dry the skin a bit overnight.

Right before placing them in the oil I'll use some of the peanut oil to moisten the skin and so my dry seasonings stick to it before putting it in the pot.

I find after 2 the oil starts to turn too much. I wouldn't do more than that

When I first moved to Texas and people in my building knew I fried Turkeys I used to get asked to fry them for everyone. My record was 17 on one thanksgiving day. By number 14 the oil was pretty much done. The last couple (mine, unfortunately) were pretty bad. The injection didn't seem to bother the oil but any spice on the outside did. Anyone that showed up at my house with spice all over one had to get my hose and spray all the crap off before they put it in. Oh and at least once a year some idiot would show up with a Frozen turkey!

Keep in mind, Popeyes uses the same oil allllllllll day, and there’s is coated with batter,,,,,if think several turkeys back to back won’t contaminate oil as much as fried chicken.
