Doing steak and fried crawfish tails later but I saw these pork strips on sale at the grocery store for $1. So I did some make shift cracklings for a snack.

Did a crawfish crab stuffed chicken yesterday so I fried up the leftover tails tonight and served with a little steak.

This morning I sliced a few thick chicken breasts in half and put them to marinate in some buttermilk. This evening I double battered them in seasoned flour and deep fried them. Made a fettuccine and baked some sweet potatoes for sides.
I added a lil marinara to my plate for dipping my chicken.

I thought his name was Spanky?
Oh - Looks good. You might want to keep him if he can cook.
