Possible.
Where is your battery? See if it is bubbling or has liquid on top after a hard run. The high rpm could be causing the alternator to charge the battery too much.

Unless we are talking about a pure performance car de-catting is probably too much of a PITA for most people. His car probably has a 400 CPSI cat (cells per square inch or cel for short) moving to a 200 or 100 cel cat if available would be a better choice and if properly designed wouldn't leave you with having to deal with CELs all the time. My 997 Turbo had a test pipe and I will never do it again. Driving around in an expensive car with a CEL on the dash is rather frustrating.
Not saying the OP should do it, but it’s pretty easy to get the CEL to go away with software or an O2 sensor spacer. My off-road race car that just happens to be titled and registered but never sees street use has them removed and my tuner turns the sensors off in my Ecutek tune.

Most likely either cats are clogged and/or failing. Or you gave a rich condition that’s overloading the cats with more fuel then they can handle if you’ve seen a significant decrease in MPG that could be it. I think those engines have injector issues, but i’m Not a bimmer expert.

I agree to the extent that they work, I have seen too many people (in the Pcar world) that have been frustrated with the claims vs the reality. I have zero tuning experience with Volvos so I don't know what is available nor how well the solutions work.

It’s the residue burning off from where you took off the make emblem

I have relatively new injectors. New plugs. Car’s running like a top. Exhaust is 11 years old.

Yeah I think you have a cat issue then.

Second on it being a bad battery.

Battery should be easy to check. I think these cars have them in the trunk so go beat on it then stick your head in the trunk and see if it’s a stronger smell.

I’ve noticed after I really get in it, 6500+ rpm shifts, and I let off the gas
Don't you drive a Volvo?

If you get caught using that off-road diesel you’ll have bigger problems than the smell.

Had catless exhaust on my 991 turbo S, Driving with the windows down was too stinky. Never again.

At those speeds and rpms you are Probably overloading the stock cats and they are not able to process all the exhaust quick enough.
If it’s tuned the tune may be running the fuel trims rich in that range.
If it’s stock could be a combination of the two.

I read this as sulfur smells after a hard on. Didn’t have much to add other than slow it down, you’re burnin rubber. Ease off the gas and let her enjoy it too

sulfer
Maybe you mean “surfer”?
You might want to check with Mrs. Gaston about who’s she let in her “cabin”.
