Al Pastor Tacos.
Neighbor is making some wings.
Going to soak a watermelon in vodka.
BBq ranch dip.
Might try to do some boiled shrimp.

I've been wondering how to go about doing "legit" al pastor. this is great and looks tremendous.

Sounds like some great menus. Mine so far is:
8 racks of spare ribs
2 pork butts
6 whole chickens
Couple pans of beans
6 lbs of sausages
Thinking about throwing on a brisket or 2, but not sure if I want to deal with getting up at 2am to get that started

I plan on smoking a brisket. If the brisket prices make me cringe I'll go with pulled pork or smoked chickens.

Waiting to see what's on sale...As of right it could be some baby backs...pork loin..hot dogs (the real good kind from Sam's) and hamburgers..

Ive always wanted to do it on the smoker as well. A legit way would be if you had a rotisserie and could slice it off and let the rest keep going.
Try it this way though. You'll forget about that idea pretty quick.
Oh and solid tip here: Just call rouses or whoever and have the butcher slice it for you. That'll take half the time off the prep.

I'll probably light the pit. I'm thinking some redfish on the half shell and some deconstructed shrimp kabobs.
