Fried food coma time

Made homemade pinapple and pepper salsa last weekend and made another tomato salsa this morning.
Fried some flour tortillas that turned out much better than expected for flour.
Fried Sacalait, onion rings and crab boil fries.
Then fried some more tortillas and sprinkled them with cinnamon and sugar and drizzled with uncle's homegrown honey.

Reminds me of how/when I blew up my gallbladder. Just add some beer battered deep fried squash fries (yellow and zucchini).
Ate myself so sick I literally started throwing up bile. 2 weeks later 911 for ride to ER and 2 days later laparoscopic cholecystectomy. Then 2 months later was 1st major pancreatitis event. That was 4 years ago, still get pancreatitis flareups.

My Dr. would have shite a brick if he'd seen me frying up fresh from my garden---okra, yellow squash and ichiban eggplant a couple nights ago.
It was a delicious treat that I only do a few times during the summer months, but with the cholesterol issues my genes carry, and I take meds for, it is not really a healthy choice------but a damn tasty one that I just have to have from time to time.
Oh, and like another poster responded, those fried onion rings look killer.

The pics remind me of a camping trip and fry off that landed my dad in the hospital with pancreatitis. He still says it was worth it.

Cook extra in a crawfish/crab/whatever boil.
Slice them about 1/4", vacuum seal and freeze.
Drop them straight in the grease from the freezer until the outside crisps up a bit.
Best damn fries I ever ate.

Thanks y'all, the onion rings were tasty as well. I've had to go on a water/fruit/veggie diet since. Finally feeling less sluggish today. Glad I only put myself through that a couple times a year.
