There are actually a handful of brands that could be based on a stereotype, including Aunt Jemima's competitor:

Mrs Butterworth's - Something about a chubby woman with an apron reminds people of a homestyle breakfast. I'm sure the marketing team put a lot of thought into that. A similar association was probably why they structured Aunt Jemima's branding the way they did.
