Leftover crawfish tail meat

I have about 2 lbs of leftover tail meat from my boil yesterday. All peeled, along with some of the onions and garlic. I am tempted to make an etouffee with it. Any other suggestions? And I do need a good crawfish etouffee recipe or any other good recipes if anyone has one.

Etouffee for certain, but I love a good crawfish omelette. And crawfish pie, too.

The last time I had leftovers from a boil, I made crawfish enchiladas, crawfish salad, crawfish & quinoa, and crawfish omelets.

I'd give you the crawfish enchilada recipe, but I wasn't satisfied with the results. They were good, but not delicious.

My favorite thing was the crawfish and quinoa, especially the second day, after the quinoa soaked up more crawfish flavor. Did you harvest lots of the fat, as well? That is key.

I love making a macque choux with the leftovers if corn is there as well. Add andouille.

Check out the etouffee recipe in the recipe collection. The one from the Plantation Cookbook. It's money.

IDK even know what this tastes like, but I found it looking for Emeril’s Crawfish Imperial recipe (which is REALLY good)...

I chop all the leftovers (with potatoes, garlic, onions, whatever other vegetables) in a food processor just enough to cut them down a couple times then make patties and fry them like crab cakes

Open bag, eat. Repeat till gone.

Otherwise it's hard to be a good crawfish stew.
