I think my all-time favorite in this category has to be Steven Seagal's brilliant one liner from the action movie classic, Hard to Kill. The dramatic music at the end just makes it.

I watched Dr. No (James Bond) yesterday and noted that I may have witnessed the birth of the 'one liner' in an action film akin to Schwarzenegger's. There was a scene where Bond was being chased by a hearse which inevitably fell down a bank and exploded. When asked what happened, Bond says "I think they were on their way to a funeral." Good stuff.
