It's the same idea, but you crack them in, and it boils. It has the taste of the gumbo juice. It's awesome.



I hard boil my eggs first in the gumbo while its boiling. Then i deshell them and put them back in to soak up the juice.

Cracking them straight into the gumbo seems like you are poaching them.

Always, and just as you stated, right before it's time to serve. Crack them and slowly drop them in place and leave them for 10 minutes. Boiling eggs and dropping them in does not work like letting them boil in the roux.

Going to make a gumbo one day where I throw in everything.

Chicken & Sausage + Seafood + Okra + Tomatoes + Eggs + Jarred Roux + Guidrys trinity. I'll post on FDB and let yall know how it turns out.

I’d try a boiled egg in gumbo

Grew up with boiled eggs in spaghetti sauce along with potatoes

I’ve had a boiled egg in chicken & dumplings once, didn’t care for it

That's exactly what you're doing, poaching eggs in deliciousness.

I've never done it in gumbo but cracking a few eggs in something like a shrimp and crab stew is money.

I’ll do it every once in a while.
You’re correct about not stirring, wait till they are cooked and still be gentle.
Today would be a perfect gumbo day. (any day really)

I put hard boiled eggs in red gravy. I’ve cracked them as discussed and you are poaching them. Really good stuff and as a few have said I’m surprised people are surprised. Go eat a Carolina fish stew and they do the same thing. Key is not to stir.

I see Perm is in my tomato camp.

I like to drop in a few hard boiled...great in a duck n sausage or chicken and sausage gumbo.
