Regular Cajun Meatball Stew I add jalapeños and don't dice everything fine, just what goes in the meatballs. I put extra meatballs in just to make the sandwiches the next day.

This is really good. I sometimes pan fry the bologna and add a slice of cheese between the hot bologna. Either way is good.
Fried luncheon meat fixed the same way is good too!

Here's a couple:
1) Grilled Yellow-Fin Tuna (YFT)
- season with a coarse black pepper and sea salt; little olive oil
- Grill for about 2 minutes each side (obviously depends on thickness/temp)
- Dress with Hurricane Sauce and lettuce/tomato
2) Smoked chicken, bacon, colby jack cheese, and garlic mayo in a pressed tortilla or ciabatta roll

Not sure if this is a simple enuff sandwich but it's an awesome sandwich from a middle Ga resturant. Sounds ho-hum but comes together and is delicious...

INGREDIENTS
1 cup mayonnaise
1/2 cup Catalina or French dressing
1/4 cup plus 2 tbsp. ketchup
1/4 cup spicy brown mustard, preferably Gulden’s
2 tbsp. sugar
1/2 cup diced onion

1 tbsp. dried parsley
1 1/2 tsp. dried basil
1/2 tsp. garlic powder
2 1/2 lb. ground chuck
1/4 lb. Swiss cheese
6 6-inch hoagie rolls
PREPARATION
Combine the first 5 ingredients in a bowl. Set aside.
Dice the onion and add it to a skillet over high heat with ¼ cup of water and soy sauce. Add herbs and garlic powder and cook for 5 minutes, or until liquid is mostly reduced. Add beef and continue to simmer until cooked through, about 10 minutes. Drain off fat.
Split the rolls. Slather them with sauce, and put cheese on top. Place them under the broiler until cheese melts, 1-2 minutes. Heap ground beef on each sandwich and serve.

I’ve made the turkey and wolf’s greens melt and it’s really damn good (and pretty easy for a group).
Otherwise, I’m usually very straightforward from my fridge. Key to me is really good bread.

Yea I’ve done this with leftover meatball stew and makes a killer foldover on bunnybread. Cajun ninja has an excellent recipe on youtube.

One way to spruce up sandwiches is to add different jams/preserves/marmalade’s to it. Mayo, mustard, or ketchup is a very small sample size of condiments that can balance and accentuate the flavor of the meat and cheese.

I get this made at Central Market in Houston.
Ciabatta, garlic mayo, swiss and salmon toasted.
Add red onion, capers, black olives and cilantro.
Boom! Isssssss good

sorry, no recipe since my wife made it and we are both at work, but she did a Curry Chicken Salad sandwich the other day that was incredible. Along the same lines as the Sriracha Chicken Salad in the OP, but prepared with a yellow curry powder or something.
