Airplane was the first to come to mind. Blazing Saddles and Young Frankenstein also come to mind.

But Spaceballs is probably among my least favorite. By that time, Mel Brooks’ humor had run its course and there were few jokes that fans of parody could not see coming a mile away.

I've only seen it once and didn't necessarily think it was great, but I do like "Tooken," a spoof on "Taken," for the name alone.




Edit to add:

With all the love I think I see "MacGruber" get, surprised I haven't seen that one mentioned yet.

To me Airplane and Blazing Saddles are the standard bearers in the genre. There's just so much there that's gif-able and quote-able and their humor has stood the test of time.
