Can someone explain to me how sex and gender are two different things?

To those familiar with these theories, it is said that sex is your biological makeup but gender is a “spectrum”.
But I have trouble understanding this.
To me, you are what you are physically. How you “feel” is irrelevant.
If a male acts feminine and/or even dresses like a female typically does, that doesn’t make him the opposite sex. It just makes him a feminine male who dresses up like a female.
If a woman acts “manly”, it doesn’t make her a man, it just makes her a masculine female.
I’m having trouble understanding what people mean when they say gender and sex are separate things.

If you really want to know from a humanities perspective -
Sex = biology at birth (and can be changed through surgery and pills)
Gender = characteristics that define an identity
A person of the male sex who carries more feminine characteristics than masculine characteristics may identify as the female gender.
Where this gets complicated (by the theoretical discussions; not by ability to comprehend) is when considering alternative forms of masculinities or feminism. This is why some claim there are multiple genders as it’s impossible to just be male or female (when speaking of genders).

Feminists hate HATE the gender "label" that trans people have hijacked because it reinforces the stigmas and stereotypes they've been trying to fight. Men who want to be women either physically or emotionally/mentally undermines the claim feminists have about the differences between the two. Masculinity and femininity are "bad" to them.

Gender came into use when discussing language. IE, 'him, her, she, he, le, la....' were gender. People are divided by sexes, not genders.
