It's "modern Asian", which I take to mean they're not exactly making sesame chicken from a picture menu.
He's a talented chef who has been on Chopped and worked twice at Commander's. I think it is safe to say the dude probably knows what he's doing. There was always a bit of Asian twist on the dishes at City Pork when he was there.

As far as I know, Jay D actually didn't come from a restaurant background. Not saying Ryan Andre is the next Donald Link or something, but he worked at Commanders, was executive chef at CP, executive chef at Le Creole, went to culinary school.. I mean it's not like we have Ronald McDonald opening up shop here
