I lived in Lexington for 16 years before moving to Louisiana, funny enough, thanks for the wikipedia entry.

You forgot to factor in students at W&L, which is honestly who restaurants like the Red Hen are mostly catering to. If you can get a regular customer base from the locals? Great. But a foodie-driven farm-to-table dinner spot like the Red Hen is far from worried about what the people in the county think of the restaurant. They have a private liberal arts college basically across the street from them.

Will they go out of business in a year? Probably not. This is going to galvanize some kind of regular base that keeps them going for a while. There will be something else to draw outrage within the next week or so.

you make reservations (using a throwaway number)for a party of 8 or 6 during prime time. then get a dozen of your autistic friends to do the same. do this for a few weeks, especially on Friday and Saturday night.
