Salad with roast beef and Gorgonzola, walnuts, tomato. Didn't have any red onions! *gasp* Had to use white. The salad is okay, but not delicious. Some days are like that.

Kodiak Pancake with Vermont sugar free maple syrup

Sautee medium yellow onion in a stick of butter. 5ish minutes
Add 3-5 cloves minced garlic, couple pinches of slap ya mama, salt, and cayenne. Cook for about a minute.
Deglaze with white wine. I use a real buttery chard. Reduce down.
Add 2 cups of heavy cream and juice from half a lemon.
Reduce about a quarter.
Taste and season accordingly.
Add a pound of crawfish tails, heat through.
Add a half a cup each of parsley and green onions. Cook a minute.
Add a pound of cooked rotini pasta. Toss to coat.
Remove from heat and stir in half a cup of fresh grated Parmesan.
