I dont want to bitch too much about the Chimes because instead of downvotes I'm likely to get doxxed but I did notice some differences..I guess I like the old appeal and seeing Killer Bees and ordering cheese fries with gravy.
I can't exactly remember what it was maybe the "stuffed shrimp" I was crazy about.
But by no means would I kybosh the Chimes. Sometimes you have to grow with a place!

Chuy's in Austin went downhill after expanding/corporatizing but haven't been in years.

Chuy's is in Tuscaloosa now.

Does something like Cafe Maspero's getting taken over by Creole Cuisine Concepts count?
Used to be one of my favorite places, but I find it terrible now. Prices are nearly double what it was, and portions smaller.

Houston’s on St. Charles is solid. Still upset the one in Metairie closed down.

Ninfa’s for sure. They have cut ties or closed the vast majority of the franchised joints. OG Ninfa’s on Navigation has made great strides to overcome the shitty reputation they built by franchising...the octopus tacos are one of my favorite dishes in Houston.
I will say her grandson..Lorenzo...the cat that started the El Tiempo empire has far and away surpassed anything his grandmother did-their food is just damn good.

Counts for sure. This is a perfect case in point.
So is Ninfa's.
There was also this place that was in Houston called the Black Eyed Pea that was awesome to me.
The got one in BR, then all of them sucked and they shut down the original.

I loved Smashburger when I lived in Denver back in 2008. I frequently went to the Colorado Blvd location.
I think it's pretty mediocre these days from the ones I've tried in Houston and New Orleans.

I liked it when it first opened, but the one on Magazine St. seems to be hanging on by a thread now.
Constantly hearing rumors of something else going in that space.
