Chicken salad copycats

Looking for Maxwell’s and/or Calvin’s copycat recipes. I can not afford this pregnancy craving anymore!

There's a lot of speculation about the recipe.. I've found that combining equal parts of mayonnaise and sour cream and using Mt. Olive sweet salad cubes instead of sweet pickle relish comes pretty close.

Thanks! I’ve also seen cream cheese mentioned. I will do some experimenting.

I've also seen Ranch dressing mentioned.. I've tried powdered and liquid in various amts. Doesn't work.

My grandmother made it by boiling the chicken first, stuffed with onion, onion tops, parsley, garlic and celery. Then she'd moisten the chicken salad with a little of that broth. It was almost identical to Calvins.

It's been alleged that Calvin's uses powered ranch that's not available anymore.

ETA: Full disclosure, I've never been to Louisiana nor been to Calvin's, it's just what I've picked up on this board over the years

It's good, but vastly overpriced for the tennis set in Bocage, I prefer Costco with all those crunchy celery bits.

I like mathernes chicken salad better and it's much cheaper...
I don't like the snobby attitude at Calvin's...thats why I quit shopping there
I hope whole foods runs them out of business....

Whole Foods is in more danger of being shuttered than Calvin's, ironically because of the poor quality of service.

Don’t know the price difference but I can say I’ve known Calvin since he was about 14 and was a bag boy at the then Bocage Piggly Wiggly and I can say for certain, after shopping there all of my adult life, there is zero snobby attitude.

And he thrives despite Whole Foods.

I have never seen snobbery from him, either. Nice guy and takes pride in his business.

People wishing Whole Foods would put him out of business gotta be closet communists.


Re: recipie. I have tried several ways, including the aforementioned dry ranch packets - which I found to be very close, tbh. Actually have a whole fryer in my fridge to boil today after the last sack of crawfish ... to make chicken salad. Chicken, Mayo, Celery, Green Onion, S&P, a little Garlic Salt, Garlic Powder, Onion Powder in the food processor here.

That’s strange. As many times as I’ve been in that store, I’ve never noticed any snobbery at all. Those folks are always friendly and helpful. Do you have feelings of inferiority on occasion?

Whole Foods and Calvin’s have existed together for a number of years, along with Maxwell’s. They all seem to doing just fine.

The only place in BR where they will NOT let a line build up. Calvin himself will check you out if you are waiting. Best service ever.
