This cold snap has me craving a pot of chili. Any certain recipe you guys use?

I get asked to cook chili alot. All I do is use the 2 alarm chili kit. For every kit, I cook one chopped onion down when I cook my ground beef. I also double the water. Otherwise, fillow the package instructions. Also, for kid I use 1 pack of the red pepper, if its kids and adults I use both of them.

I do the 2 alarm mix or one that is sold here in kc area. Cut up onion, red and green bell pepper, saute them then add meat. When meat is browned add tomato sauce, I add one can of fire roasted tomatoes, and one can of tomato paste. Instead of water like the instructions say I use beef broth, you can cut it with a little water. Add spices as instructions say.

Yea don't sleep on the 2 Alarm mix, it's good stuff. I like to add an onion, poblano, bell pepper, and a big jalapeño. Kidney/pintos and a can of diced tomatoes too.

I started using dried peppers (seed them) and re-constituting them in boiling water. Use a blend of Guajillo, New Mexico, and Ancho chilis. Blend them in some of the liquid with garlic, cumin, salt, sugar. The explosion of taste is indescribable. Add Pasilla peppers or chipotles to add some heat.

I do the dried seeded chills as well as powdered Chili I get form Pendrys In Ft worth, 3 different kinds. The real deal in chili powder. Just mad a batch using corse ground
Brisket, this batch I did using Chilpoltes , red and green jalapeños, garlic, onions, cumin, Mexican oregano, diced tomatoes, tomato paste, beef stock, And a few other ingredients, will be better tonight.

I use stew meat instead of ground beef and 2 alarm chili kit plus a dark beer.

Here's a copycat 2-Alarm Chili recipe I found. The author said she measured out the individual packets This was before they consolidated some of the packets.

Two-Alarm Chili

"My family likes the chili made from the packet of 2-Alarm Chili, so one day I decided to measure out all the ingredients. It's much cheaper to measure out your own ingredients!"

2 lbs ground beef, ground for chili
8 oz tomato sauce
2 cups water
2 tsp paprika
4 tsp cumin
1 Tbs dried onion flakes
1/4 tsp garlic salt
1/2 cup chili powder
1 tsp ground red pepper
2 Tbs masa harina flour
1/4 cup hot water

1. Brown beef in a Dutch oven; drain.

2. Add tomato sauce, 2 cups water, paprika, cumin, onion flakes, garlic salt, chili powder, and ground red pepper.

3. Cover and simmer for 30 minutes, stirring occasionally.

4. Dissolve 2 tablespoons masa into 1/4 cup hot water to make a thick, but flowable mixture.

5. Add masa mixture to chili.

6. Cover and simmer another 15-20 minutes.

Servings: 6

I prefer chuck roast, no bean or tomato chili


Though I scarfed my mom's 2 alarm chili this weekend like it was my job

I prefer no beans or tomato as well...however, I have a family. To make everyone happy and after tweaks....

3 lb ground beef
1 lb smoked sausage
3 packs chilio mix
3 cans diced tomatoes
1 can black beans
1 can kidney beans
1 can mexicorn (drained)
small bell pepper diced
small onion diced
chopped garlic to taste
chopped jalapeno to taste

throw in a crockpot on low for about 6 hours. Serve with cornchips, shredded cheddar and sour cream.

Never had to throw away any leftovers.
