Healthier Roux

I know I'm going to get murdered here.
Has anyone ever had success making a roux with a healthier oil than vegetable and any other type of flour than all purpose? I have a gluten allergy in the family now and I am also trying to eliminate vegetable oils from our diets.

Well you can eliminate the oil by baking the flour in the oven to make a dry roux. Not sure what kind of gluten free flour might work tho.

Is it legit? Because these things don't usually just pop up and I'm not changing my gumbo to suit someone following a bullshite diet unless it's medically necessary.

May not be. But just seeing if anyone had had any success with alternatives. I'm sure i'll be making my same old roux for my first pot of gumbo this season.

I sometimes use a dry roux, oven, and create the roux in the pot by pouring enough stock in to create the paste and then warm it up and get it a bit darker and then add seasoning.
You can also get dry roux at the stores but making it is very easy.

If it isn't Celiac's, I would make a normal roux and tell them it's gluten free and see what they say after eating it. You can see if they're full of shite.

I've done one with Avocado oil. I was too far into it when i realized I was out of vegetable oil.
I honestly couldn't tell the difference in taste. Just takes a little longer to darken up.

Isn't it the gluten in the flour that is responsible for "tightening" the Gumbo or gravy or sauce? I would think the fat/oil swap wouldn't be as big a deal as the gluten free flour swap.

My wife and I are doing Whole 30 and she made etouffee and gumbo recently using almond flour and I think olive oil. For a "healthier version" of a couple of my favorite dishes, it scratched the itch.

I just used Avacado oil and it turned out great. I have also used ghee and I liked how it turned out but I could taste a faint bit of ghee.....not sure if you didnt know it was there you would notice it though......it was very subtle..

Vegetable oil doesn't contain gluten..
