I was surprised when I read about MSG not actually being bad for us. It was so demonized in the 80s and 90s, much like coconut oil.

This. Tomatoes have msg. It isn't bad for you in moderation and is the reason why some foods taste delicious.

canes is the worst chicken without the sauce...I laugh everytime I see marinade

It's naturally occurring and really has no known health implications despite being incredibly well studied.

People's fear over MSG is almost completely unfounded. It was originally made from Seaweed with salt added, now it's made from corn and/or beets. It boosts the "umami" which is essentially the savory taste of a dish. It's used all over the world in every level of cooking but the US acts like it's akin to sprinkling rat poison on food. Almost the entire reason this started was a random doctor who noticed that he felt achy after eating a big chinese meal and surmised MSG was the cause. That's pretty much it. There's not much in the way of actual science that shows it's bad for you.

What's funny is Umami and MSG are basically the same thing, yet top level chefs will say they use Umami and get "oooh's and ahhh's, while MSG is scorned like the devil.

I'm not the least bit concerned with MSG as I am with the loads of salt, and fat. Hell, you dip the chicken in more fat with the cane's sauce. That's a lot more unhealthy.
BTW... the brine would be a lot more useful if besides just adding moisture to counteract moisture loss during the cooking process if they would add herbs and onions to the brine to introduce flavor into the meat along with it. It would be a lot more flavorful and maybe you wouldn't have to dip it in spicy mayonnaise to get flavor.
