Christmas Breakfast ideas

The past three years we have done:
Large egg/sausage/hash casserole
Mini egg pies (frittatas)
Mini pigs in a blanket
Of course plenty of mimosas and coffee to go around.
Looking for some ideas.

Venison and pork sausage meat pies, prepped the day before and cooked in the deep fryer on the patio so as not to disturb all the prep for the late afternoon Christmas meal.
Serve with fresh grits and sausage gravy.

We have a pretty casual breakfast set out buffet style so family can fix plates as they arrive in the morning to eat before we all open gifts. We have scrambled eggs, breakfast burritos, grits, biscuits, bacon, sausage, fried ham, french toast casserole, some sort of hashbrown casserole, cinnamon rolls, fresh fruit and whatever else someone may bring. Nothing too unusual.
You could do the usual breakfast casserole with bread, eggs, sausage, cheese, etc...
Quiches can be made ahead and warmed.

We're doing a couple different quiches and a fruit salad. Then a bloody mary and mimosa bar.
We just wanted something that was easy to do so we wouldn't be spending our entire Christmas morning in the kitchen.

The last few years i've made cinnamon toast with christmas sprinkles, eggs, and sausage. Nothing fancy.

Cinnamon rolls and sausage balls at our house. The sausage balls get mixed a few days before and everything goes into the oven that morning.

Breakfast Pizza!! Cheese, soft scrambled eggs, sausage, crumbled bacon, etc, etc, etc. to make you happy!

We always make gougeres and little sausage drop biscuits. Then brunch it up around 11. Tenderloin over grit cakes or something similar.
This was brunch two years ago (asparagus, andouille grit cake, tenderloin, egg, mushroom cream sauce with the pan drippings):
Last year we stepped it up with Christmas tree shaped grit cakes.

We do sausage balls and garlic cheese grits every Christmas

Thought you were going to comment on my wife stacking all of the components. No idea why you'd put all of that over asparagus, but I digress.
I think it's just grits with some browned andouille and some sort of gouda-ish cheese. Pour into a baking dish and let cool. Cut out and bake them separated to get browned. We used to batter and pan fry, but just baking a crust on them is better to us.
