A bone in filet has consistently been the best steak I've had at multiple high end steakhouses.

What's everyone elses favorite?

Side note- am I missing something with the whole dry aged thing? I've had a dry aged ribeye 3 times at 3 different restaurants and it was this weird, moldy, gamey flavor.

At a nice place, with prime choices, I prefer the strip. If it's just choice, then I prefer the ribeye. Prime has plenty of intramuscular fat in the strip. The lack of it in the choice is why I like the ribeye in choice.

Ribeye. My favorite part of the ribeye is the exterior most strip of meat around the perimeter of the steak.. where the fat is.

My wife likes her steak burnt to a crisp. I've found that a cheap cut tastes the same as an expensive cut when it's burnt. So I buy boneless beef short ribs. They are always on sale. I drizzle some terryaki and olive oil in the pan and it carmelizes into a sweet coating on the charred meat.
