I just started a low carb diet, what are some good meals?

My wife and I try to minimize carbs and eat a meat and a veggie only during the week and we've both lost a good deal of weight. A typical week would look like this:
Baked Salmon basically S&P, garlic powder baked at 250 for about 20-25 minutes then finished with lemon juice.
Boneless skinless chicken thigh or pork chop "rice" and gravy but I use spaghetti squash in lieu of rice. you don't need to use flour to brown the meat.
Baked whole chicken but I spatchcock to reduce cook time. Just rub olive oil S&P, garlic powder on skin and bake.
Chicken thigh picatta substituting squash and zuchinni ribbons for pasta.
You can make cauliflower into "rice" as well, plenty recipes online. It makes a base for a bunch of good dishes you can vary with shrimp, chicken, pork with a base sauce of coconut milk, some chicken stock, mushrooms, ginger, garam masala, turmeric, red pepper, etc. The same can be served with spaghetti squash instead of riced cauliflower.
Nothing wrong with an occasional steak or a hamburger with an onion gravy either.
Cauliflower nachos with chicken breast/ thighs are good.
Eggplant Lasagna, easy on the marinara.
Grilled Portabella Mushrooms stuffed with a little fresh sautéed spinach, cheese, and lemon juice.
Obvious salads are obvious.
That's enough for now, the weekends are much more fun around my house but the above is hardly some huge sacrifice. good luck...

Cabbage is a very filling and good food to pair with meats. It's cheap and can go a long way.
I'm constantly rotating pork chops/loins, chicken and ground turkey taco meat (no wraps... just the meat) for my meat portion. We eat a salad every night as well, although we are doing low calorie, not low carb, so we use sesame ginger dressing. I advise oil and vinigar for you.
The key is to always brine your chicken and pork. Do a 4c water to .25c salt ratio, and you'll have great meat every time. Dress it up as you desire after that, but don't add any more salt

- Scrambled eggs, turkey bacon, sliced avocado is my go-to breakfast.
- For lunch, I usually have a chicken or shrimp and asparagus stir-fry.
- Dinner will typically be a ground turkey mixture that includes onion, jalapeno, chopped bell pepper, and a couple dashes of curry powder.

For times when you don't want to cook but do low carb here were some of my go-to fast and easy meals.
Jack in the Box - Ultimate Cheeseburger. I would get it without ketchup which has carbs and throw away the bun. Two beef patties, two types of cheese and mayo.
Wendy's classic double - throw away the bun and use the two patties as the bread with lettuce, tomato and pickles in the middle.
Walmart lemon pepper rotisserie chicken
Get tacos at Taco Bell, dump the meat and lettuce in a bowl and throw away the shells.
I think the fastest, best and easiest were the HEB frozen hamburger patties. You can always have them on hand in the freezer. They taste like they just came off the grill and take two minutes in the microwave.
Popeye's has the naked chicken strips. You can get chicken salads - hold the croutons and carrots. Chinese buffets usually have at least a few items that will be low carb - pepper steak, beef or chicken shish kabobs, salt pork, cabbage dishes, etc.
These plus other low carb meals will make it easier to stick to the diet. The most important thing is variety.

During our two months of Whole30, my favorite new thing my wife cooked was called Egg Roll in a bowl. Had it last night as a matter of fact, and will probably go home for leftovers at lunch.
I'm guessing you would not have to be as restrictive with the ingredient. Just improvise if you don't want to buy things like the coconut oil and aminos.
Paleo "Egg Roll in a Bowl"
1 tsp. coconut oil
1 lb. ground pork
5 minced garlic cloves
1/3 cup coconut aminos
1 tsp. freshly minced ginger
1 tsp. rice wine vinegar
1 tsp. sesame oil
1 10 oz. bag coleslaw mix (shredded cabbage and carrots)
sliced green onion & sesame seeds, to garnish
Melt coconut oil in a wok or large skillet over medium heat.
Add pork and cook until browned, using a wooden spoon to break up.
Combine garlic, coconut aminos, ginger, vinegar and sesame oil in a small bowl.
Add sauce and coleslaw mix to browned pork and stir. Reduce heat and cover; cook for 15 minutes or until vegetables are soft.
Garnish with green onion and sesame seeds.

Are you on Instagram? Start following people who have keto or low carb in their user names. You will get fantastic meal ideas as well as recipes.
Don't start playing with the low carb sweets and desserts until you've followed the diet for a while. Those really should only be for occasional treats.
Some of my favorite meals:
Crustless quiche, with any number of interesting meat and veg combos.
Steak and eggs. Steak and avocado. Steak and mashed cauliflower. Steak and asparagus. You get the idea.
Stir fry combos, using vegetables like cabbage, mushrooms, zucchini, and proteins like beef, chicken or shrimp.
Meatballs and or meat sauce over zoodles (zucchini noodles). Zucchini noodles are an awesome vehicle for the sauces you usually eat with pasta. It's not pasta, it doesn't taste like pasta, but you can have spaghetti sauce (make sure you use tomato products that have no added sugar) or Alfredo sauce or the like.
Cauliflower in a number of ways. If you buy the bags of riced cauliflower (or do it yourself), you can have mashed cauli, cauli rice, cauliflower crust pizza, cheese cauli mac (no real mac used).
I love to have bunless cheese burgers with good toppings like avocado or bacon or grilled onions. I prefer my own homemade burgers, but that's just me.
If I feel the need for fries, zucchini fries (dipped in egg, dredged in parmesan cheese and a little almond flour and then baked) are awesome.
Almond flour is a good substitute for regular flour, (Google Fathead Pizza) but should not be a daily thing. Maybe once a week.
Tacos, using shells made of cheese. AWESOME!
Nachos, using nacho chips made of cheese.
Stuffed bellpeppers, no rice in the stuffing. Usually a combo of ground beef and pork or ground beef and bulk sausage along with mushrooms and maybe cabbage, topped with cheese.
Pay attention to things that you might think you can use freely, like the trinity. The carbs add up. As much as I love onions, I am much more careful with the amount I use in cooking. Tomatoes are not carb free. I count the number of grape tomatoes I use. Broccoli is not carb free! Cauliflower is lower in carbs than broccoli, just so you know.
Wings (not breaded, no sweet sauces), baked chicken, grilled chicken, baked or grilled fish.
Fast food:
McDonald's breakfast, I order scrambled eggs and a sausage patty or bacon.
Wendy's: Bunless Baconator (I sometimes forget to say no ketchup, and then I have to scrape it off).
Hardee's menu has a couple of low carb options. A chicken club and a burger that they serve wrapped in lettuce. They also have a low carb breakfast bowl, which I have not tried.
And really, any place will give you a burger without the bun, but Wendy's and Hardee's don't question it.
