Thanks I will give that a try. Not sure how adding sugar after the cooking process has begun will work out. Hope I can get the recipe to taste like it normally does. Finding the berries can be a challenge in itself.

Once I start cooking the jelly it's a little to hot to taste it. The juice and sugar are not combined until the cooking process begins. Plus I am not sure if it tastes the same before the cooking process.
Just hoping someone who makes jelly regularly could give me an idea if I should increase the sugar or water down the juice or both.

Every few years I make mayhay jelly. Last year I bought my mayhaw juice from a new grower. I noticed that the juice was a much brighter red then I have ever used before but didn't think much about it. Used same recipe I have always used but it came out so tart I had to throw it away. I know it's not a case of prior batches being watered down because I have bought the berries in the past and squeezed the juice with no issues.
So, my question is do I water down the juice and/or increase the sugar amount? The bad part of jelly making is you can't taste it to determine if it's right. Hate to have to throw out another batch but I am at a loss of how to adjust the recipe.
Any help would be appreciated.

Chicken with a grease gravy recipe

My husband seldom asks for me to cook anything particular so when he does I am delighted for something new on the menu. He came home and asked for chicken with a grease gravy. Never made it so would really appreciate some recipes and tips.

My outlook is as positive as I can be. It makes me sad to read your post because you don't realize the gift you have. I have terminal cancer and now I try to make every day the best I can. All my life I kept thinking when X happens I will find peace and happiness but if it came to pass I was chasing the next thing I thought would make my life complete. I had/have a great husband, a fantastic job but kept on chasing, something (no, I was not messing around). Now it's too late and I realize it was right in front of me and I should have appreciated things more.
I know this sounds like a lot of cliches' but it is true. Enjoy your life, family, friends and good times when you can. You just never know.

I will never forget it being on my nieces Christmas list and it taking me a few minutes to figure out what she was asking for. She had "Bohemian Rap City" on her list. Thank goodness she was only around 8 at the time.

I agree that it was probably a local mainly due to where a couple of the bodies were dumped but you never know.

He is very good about being out and interacting with his constitutes. He is in Acadia Parish all the time talking to both large and small groups. When a Vietnam vet's remains were returned to Crowley Higgins was present. I respect him for being out and approachable in his district. He got my vote.
We used to also go almost every Saturday night in Lafayette at the old Plaza.

Thanks Geaux, appreciate it. Sounds like you did have a fun experience! Mine is not nearly as much work as you had to deal with. Just have to remember what bills are on auto pay with that card.
Card has been cancelled and new card being mailed. What a pain.
