B - do you think Parish will start brewing some one-offs once they get Envie/OV/GitM dialed in and on auto-pilot? Or is that something they just aren't likely to do?
I think the one-offs (even if they are keg only) help keep the interest high in a brewery and give folks like us new beers to keep trying. It also allows the brewer to experiment a bit without mucking with his regular lineup.
As you can see, I'm already ready for Parish to come out with something else...

Ghost in Space was galaxy hops and cask conditioned if I recall correctly.
Definitely a chance that regular GITM drinker didn't like it as much.

One-offs tend to be hit or miss, but I really enjoy them. If I see a one-off, that's usually what I'm getting...

Zombie Dust fresh from the tap at Munster changed my whole outlook on hoppy beers back in late 2014. I've bought a case from the brewery and been underwhelmed by it as well (it's pretty "balanced" nowadays for an APA).
Almost every craft beer recipe is just a snapshot of the beer at that time. Tastes evolve, availability of hops changes, financial pressures change.
My preference is for my homebrew IPAs to have some improvisation (changing hops or yeast or mouthfeel) within a loose recipe. I appreciate the same from craft breweries, so I drink a lot of "one off" growler fills and pints at tap houses rather than bottles or cans.
I think about it like this, if a craft brewery gets too comfortable with their recipes and just scales up because of popularity, you'll end up deciding they're passé. See, for example, IPAs from Sierra Nevada, Oskar Blues, Bells, Lagunitas.

All depends on tank space. Reve coffee stout was a one off that took on a life of its own and got the full 30bbl treatment this time (he said they didn't get all 30bbl due to the mess the coffee grounds made). The first batch of that was just 5bbl pulled from the Serendipete batch. Serendipete (formerly Neapolitan) was Imperial Reserve with too much water added, so he added vanilla, chocolate and strawberry.
So you see that a lot of the one offs end up becoming pretty popular.
A sour program is in the future, but is a couple years away.

One of the bartenders told us on Saturday that they are planning to bottle Reve in the near future.
The Fuzz was another they had on Saturday that was very good.

Reve is incredible. It got me rethinking my coffee additions in my own coffee stout. I try to keep the coffee a bit subdued but the coffee in Reve is in your face. I may tinker with slightly upping my coffee amount.

I'm playing devils advocate here, but are we no longer allowed to be critical of a beer simply because it's local? Simply because some of us know the parties that create these beers?
I see a lot of this with anything local, whether it be a beer, restaurant, chef, or personality. Take a step back. It's an Internet message board, what do you expect. Just because it's local doesn't mean they can't be flawed. Just because a flaw is pointed out doesn't make it necessarily true.
Now there were a couple who were being a little hyper critical of Parish and they always appear when a Parish beer thread is started. There are others like myself who loved Opus and wish they would have stuck to the original recipe. Doesn't mean the new recipe isn't good. Doesn't mean Parish still isn't a great brewery. All it is is people expressing their views. If you disagree, then point it out. Don't throw your hands up in anger because your favorite local whatever is called out.
This board takes itself entirely too seriously. We aren't changing government here. We are talking about our personal likes/dislikes, take them for what they are.

I had a 7/5 envie and a 6/13 envie this evening. 2 very different tasting beers. 7/5 had a flavor profile more similar to ghost and the 6/13 reminded me of OV (batch 1). Call me crazy but there was a note able difference in taste and appearance.
BTW, I can call a better offensive game than Cam Cameron (so can 95% of the FBD)
