okra
As finnicky and uppity is the Lousianan in comparison the rest of the US of A, I am very surprised you people eat okra. Very surprised.

Look in Rat's profile pic. Do you see an ice chest? WWJD?
But in all seriousness, that is the way we do it in Cajun country so it can't be a "rule."

Burnt is the only time roux is considered too dark.

Don't eat raw oysters in a month that has an "R" in it.

Brussells Sprouts in gumbo
As much as I love them, and as often as I eat them, never in a million years would I think to put them in gumbo.
I'm no gastronomist, but it seems that the cruciferius veggies don't belong.

Medium grain rice is the only way to go

Here's a rule we might could all agree on
Boil your sausage (to release most of the fat and grease) before adding it to your gumbo.

Not a rule, but first sentence of a Louisiana ice cream recipe.
"Brown onions over medium high heat."

1. No par-boiled rice in anything!
2. If jambalaya doesn't contain meat, it's not jambalaya.
3. Gumbo does not mean everything in the kitchen thrown in a pot.
4. No brightly colored, barely cooked vegetables should be visible in a gumbo or jambalaya.
5. Crawfish do not need to be boiled for anymore than 3 minutes.

No. Do people really do that? Slice and brown first. Then drain before adding to gumbo
