Just curious as to your experiences and any tips you may have.

It'd be a two day drive to a destination in the middle of the country where we'd spend two days, then it's be a two day drive to the west coast where we'd stay two days, then it'd be a two day drive to another destination in the middle of the country where we'd stay 5-6 days, then a two day trip back to the east coast.

Doesn't sound particularly fun, but I don't have a one year old yet. Ask me in a year and 5 months

I'm sure it'd be fine though.

Not with a 1 year old, but I did it with my wife which was probably just as bad

Have a tablet or something they can watch tv/movies on and try to do your driving at night when they are asleep if you can.

Drove from WA State to San Antonio with a 1 year old, in addition to a 8 and a 6 year old. My thing was to only drive for 8/9 hours per day. However, the stretch from Mt Home, ID to Cheyenne, WY was a tad longer, and the 1 year old let us all have it for about 30 minutes before she passed out We were about 30 miles from Cheyenne, and she just went bonkers.

This site has no shortage of dumb arse posters, but not on the level you're inquiring about.

Down the East Coast, it sucks, which you already know. Nothing more to tell you other than plan to be behind and stopped consistently. Not fair to the lil one or you guys truthfully, but if you're set on going.
