Iverstine Farms Butcher Shop

Looks like Iverstine is looking to be open this fall. I can attest to their chicken, turkey (last naragansett for thanksgiving was awesome) and pork. I'm very excited. I didn't realize they had to send off to inspector and couldn't have for instance pork chops cut to exactly what they wanted without having their own shop.
Great kickstarter if you're interested in that.
Should be a great addition to Perkins road.

I understand that the prices will be higher than normal grocery stores, but I wonder how much higher?

I have never bought from Ivestine, but I buy almost all of my meat from a similar type farm where I'm located
beef is normally going to be really expensive, like almost double that of a normal grocery store
pork and chicken are much more economical, as they are only about 25% more
you save money by buying whole birds or 1/4 cow/pig

Haha I know, right? Pretty sweet deal for them. I hope other people back them but I won't be spending $200 for a meal with Food Network Star Jay Ducote (and I really like the guy).
The only one I found interesting was the beef butchering class.

Did you read the Kickstarter page? It'll answer your first question. And I would think if he reaches his goal his contractors would be very happy for him.

I like the idea of this place and have purchased meat from these guys at the farmers market for a while now.
I dont know how I feel about a kickstarter to open your business though. Usually you dont open a business until you've done all the hard work, etc to procure the equipment you need to open said business.

You do know that's pretty much exactly what Kickstarter is for right? It's to fund projects so someone's dream of opening a cake shop or art gallery or a music project can become a reality.

Kickstarter and its ilk is pretty neat for projects like this (see also Pizza Delicious and Blue Oak). Certainly they arent looking to raise the entire capital needed to open a spot, but getting community involvement and micro lending for even 10% or less of the total capital need can do a lot of things for a small business.
1) Raise money free and clear with no interest
2) Develop community support and buy in
3) Create buzz and press
4) Give folks a reason to check out the place once it opens.

call me old fashioned... i guess the days of someone working hard for something are over.

i'm not questioning the work they put into their farm and their animals one bit, top notch operation as far as that's concerned.
i just don't like they idea of asking for money for something that you are conceivably going to make lots of money on..

I wouldn't say nose to tail butchering is a gold mine. The kid's not even 30 and it's a first generation farm. I think they're mainly trying to fund some of the smokers, curing, etc to bring not only fresh meat but sausages etc. Kickstarters a great way to get people interested in the place. I'm looking forward to being able to ask for texas style beef ribs.

Apparently this is the guy that's got something to do with the whole Jay Ducote Taco Shop Food Court Contraption Thing. I forgot the whole story, but he showed up a few weeks ago, I think.

Eh, the days of getting a small business loan super easily are over too I have no problem with the community pitching in to help something they presumably all want as well become a reality.
There are a lot of different businesses I'd like to see move into BR and if making small donations made that an easier reality, I'd donate without a doubt.

Kickstarter funds are not a donation. You are paying for something in advance. In this case he is selling product and/or events at certain values. One may argue on the values but they seem to be reasonable. The idea is for his future customers in the community to "invest now" to help jump start revenue ahead of opening doors.
