I’ve never had any problems with diacetyl in any of my beers outside of some oddly mashed/oddly fermed sours, but outside of lagered beers, I never do a diacetyl rest. Even with boils as short as 30 mins on some of my NEIPA’s. I mean, a diacetyl rest on a lager is typically done at around 50-55°, so the temps you’re fermenting a NEIPA at would be well beyond that. Are you having problems with diacetyl?

And I can confirm I’ve gone grain to glass in ~9 days, but I don’t like the way it usually tastes fresh out the keg and feel it’s best after that first 5-7 days sitting at serving temps.

Nope. I wouldn’t keg it if I did! I wait until it fully attenuates for that respective style of yeast.

With these Kveik yeasts booming, we’re going to see homebrews that can be pumped out in 5-7 days now. That Monstera Triple NE at Miel fermented with the Hornindal from Omega in like 3 days to 9%. He went grain to service in like 9 days! And temperature was free rise to 90°+!

I've been fermenting around 7-10 days. FG is usually around 1.018. This next one, i'm going to ensure fermentation is complete. So anywhere from 7-14 days.

Depends on the strain. Again, if ferm ceases, or if i'm happy with the FG at measuring time, then i'll cold crash and keg.

with a conan strain or London 3 and your fermentor is still going at 9 days, you arent putting enough yeast in there. my fermentation is usually done at day 5-7. it is a roaring strain of yeast. I usually have my neipas kegged by day 10.

So I've been reading this thread for a bit now just out of minor interest. I had a mr beer kit and few years ago. I brewed one or two extract beers and just kind of got bored. This christmas the wife got me a kit that i'd say would be a step up (not quite a Northern Brew kit). The kit had a 1 gallon glass carboy and an all grain recipe.

Been reading here and watching youtube videos since christmas. I've got the kit batch fermenting now (day 7). Will bottle next week.

This week I've been creating recipes on Brewers Friend website. I came up with a amber recipe and picked up my grains, hops, and yeast yesterday from LAHOMEBREW. The plan, for me, is to test a few recipes in the 1 gallon to get the feel for all grain and figure out a few recipes then upgrade to 5 gallon batches.

Here is the recipe I came up with:

Congrats! Have fun with it. When i first saw the 1 gallon brewing kits at Williams Sonoma, i thought "where was this when i started out".

I usually have a violent first couple days of fermentation. Blowoff tubes are a must. Around day 3, it's subsided enough to add the biotrans hops. But around day 10ish, it appears to be finished fermenting.

The kit said to use a blow off with pan of water. I had that setup running until yesterday. I switched to the airlock. The CO2 and krausen appeared to have slowed down substantially enough to switch out.

I was literally thinking about trying to rig up something like this this am!

I’ve never *knock on wood* had oxidative issues with my NEIPA’s, but I like cold crashing for easier kegging, and it’s a certainty that carboys with air locks suck in oxygen in the fridge when they’re crashing.

This is pretty cool.

Think I might brew again on Martin Luther King Jr day. cause I have off... I want to try another dark beer, hoping to have it ready before all the cold days this year are gone. To date I have mostly used recipes I found online somewhere. Thinking about making one my own this time.

That is very smart. Reviews though, are saying it doesn't really work. Still some design flaws to be worked on.

right. i man how hard could it be to rig one of those up..... a plastic t fitting. i think i have one in my truck. a back you adhear to one side and hose to your liquid.

hell you could make a bucket inside a bucket simialr to how a 3 piece air lock works and have enough stored co2 to go back in.

He mentioned that in the video. I wonder if the reviews are of the gen1 version or the new one.

Anybody got any thoughts on how to rig something like that up on a conical?
