Ceviche is awesome. I also had a similar beef dish that was Asian. Something Lao...the name is eluding me. It was also delicious.

Had pata negra at lunch today and I've enjoyed durian (it's like a custard rubbery texture with a taste of pineapple and caramelized onion/garlic).
And never tried but would like to eat.....actual wagyu from the real Kobe from Hyogo is about the only thing I haven't tried that an almost must have.

Steamed artichokes. Stuffed artichokes, too. I don't think it counts that I've had artichoke dip or salad with artichokes from a jar.

I've had durian in Asia before. I thought it was pretty gross, like eating stinky cheese out of a fruit. They make entire markets smell bad.

I've had the unofficial version here in NOLA, but wasn't sure if that counts. The flavor is unbelievable. It would be a part of my last meal.

The stuffed artichoke would be doable.
I may get a stuffed artichoke recipe thread going. I can't have them right now, but I'm gonna break down soon.
It's one of the most delicious things you'll have. There are artichoke brownie recipes out there that are delicious too. Just not the same.
