Potato salad in Gumbo

Since its getting colder and all that means its gumbo season. I have just recently started eating my gumbo with a potato salad. Also, I've been putting a few eggs in it too. Where did potato salad/egg in gumbo originate?

Potato(e) salad in gumbo in gumbo is delicious.
Only chicken and sausage, though. Seafood gets that rice.

I don't like it.
My aunt that passed away always did it, and it is mentioned every get together with gumbo. Just gets too messy. And IMO the gumbo needs to be a simple one.
By simple I means eggs, hellmans, potatoes, salt and pepper.
I will crush a good potato salad but I always want it on the side.

There only one thing I eat with my gumbo, and that's sweet potato's!!!!

Clotille Robichaux started it in 1936 during the Depression. They only had one bowl each.. Times were hard.

When people eat potato salad in gumbo is it in addition to rice or do you swap the rice for potato salad? I always assumed it was both

I love potato salad with gumbo, but I keep it on the side and dip each bite. I don't want it in the gumbo bowl.

The potato and the egg thicken the gumbo and lend a sweetness while cooling off the temperature of the hot gumbo. A sweet potato is good for an alternate. It's just a low country thing.. and I do it every time.

I didn't grow up putting potato salad in my gumbo, but I do enjoy it. Only a bit at a time because I don't want it to change its form. And if there is a bit of pickle relish in the potato salad, I like that contrast of texture and tartness in with the gumbo.

I love it on the side. put some potato salad on the spoon then dip it in the gumbo.

This is how I eat it as well. I don't understand the appeal of putting a big spoonful on top.

Not sure where it originated, but my parents picked it up from some friends when they lived in the Ville Platte and Abbeville areas in the 60s. Not sure which of those towns gets credit for introducing it to them. I'll have to ask.
They brought it north for our family when they moved up here, but we were the only family I knew who did it. I think it is still pretty uncommon up here.

American gumbo maybe. The Vikings that invaded Ireland put potato salad in their gumbo because they didn't have any rice.

Eggs of course were a way to stretch it. Same with all of my Italian friends growing up. We all had big families and they put eggs in red gravy because they were cheaper than a meatball.
