It's a close one but I'd have to go with Casino w/ DeNiro/Pesci over Leaving Las Vegas.

Leaving Las Vegas is probably the most true to life. That and Casino.
The movies that depict what Las Vegas is really like for those who stay for more than 3 days would probably have my vote.
