Huevos Motulenos. Specifically the ones from Cafe Pasqual's in Santa Fe.

Juevos Rancheros
Cook down some chorizo and remove the excess grease from the pan.
In a separate pan, scramble eggs.
Layer the chorizo over the cooked eggs.
Top with a good serving of shredded cheese and a few sliced jalapenos.
Serve inside a heated corn or flour tortilla with picante sauce, sour cream or salsa.

That's just eggs on tortillas, albeit good.

Huevos Rancheros are covered with ranchero sauce, or else they're not really huevos rancheros.

I've never gotten into chilaquiles. Eggs and sauce on soggy tortillas. Meh.

It kinda is supposed to be

/r/food will saw your penis off if you post tortillas and eggs and call it huevos rancheros because of the lack of ranchero sauce. It is probably the most toxic topic on that entire sub And I don't really blame them.

(I've had chunkier and different varieties of the sauce, but the presence of sauce is important)
